What’s in my box today?
 Frittata.
Cheese.
Love.
 
Bridgit’s Box is always easy, quick and delicious. And I’m talking about my lunch, people.
 
A frittata fits the box perfectly. When making your lunch, look around your kitchen and see what items you have on hand. We want to save money for shoes, a necessity, therefore we must see what we have before we run to the grocery store.
 
One shall always work with what’s in their fridge. A statement Bridgit’s Box rule.
 
Today, I found a lonely potato, half an eggplant (so random), eggs (another life necessity after shoes), tomatoes and an onion. I scratched my head and thought, “What can I whip up for lunch that will make Brittney beg for a bite?” A frittata!

I lost my frittata virginity this morning, and I think I really did find the promise land. Here’s how to do it:
 
 Cut your veggies and throw them in a skillet with olive oil. Sprinkle in some seasonings (garlic, basil, oregano, pepper and salt). After your veggies and starches (strive to have at least one lonely potato in your frittata, every good one includes a potato) look as brown as your skin after a day at the beach (and smell DIVINE), turn off the heat. Then pour 6 whisked eggs on top – you can combine everything right in the skillet! After, pop it in the oven for 25 minutes till it’s crispy and brown on top. Hello, frittata.

BAM! BHL lunch break certified. I felt like Martha Stewart, but with better accessories.
 
Super easy, super yummy.
 
My frittata proved my predictions right:
It was simple to pack, the perfect break to my busy BHL Productions day and Brittney begged for a bite. And then another.
 
I could make another one tomorrow. #yum.
