We live in jeans over here at BHL and in the lunch universe, the sandwich is equivalent to our beloved denim. Sandwiches and jeans can be dressed up, dressed down and are globally enjoyed by all.
As a lunch queen, I always strive to make a little something that will impress my eyes and taste buds (i.e. frittata) but this week, I learned that the best things in life are timeless and simple – but never BASIC! (**BHL is never, ever BASIC).  I fell in love with the art of The Sandwich again and it was quite queenly to incorporate into my daily regime.
Since Turkey Day is right around the corner, I was inspired to create a Thanksgiving sandwich that could transport me from my office in New York to my cozy home upstate surrounded by apple pie, mashed potatoes and my pug’s love.  The “Thanksgiving Sandwich” can be achieved five minutes before you head out the door to work, which is pretty mind blowing considering it takes your mama a whole day to throw a Thanksgiving feast on the table.

All you need is multigrain bread, turkey, spinach, cream cheese and spicy jam. Spread some cream cheese on one slice of bread and the spicy jam (you can use a zesty strawberry, tomato or cranberry spread) on the other slice, slide the turkey and spinach in the middle and enjoy an instant Thanksgiving!
Sandwiches don’t have to be boring, you can literally put the whole world in between two slices of bread – so let’s get creative and make our lunch #fierce! Remember that it’s a Bridgit’s Lunch Box commandment to make something beautiful and delicious out of what we already have in our kitchen. Here are my favorite versions of the King of Lunch.
1. Tuna Nicoise Sandwich –  Make tuna salad with cucumber, red onion, hard-cooked eggs, and olive tapenade. Make sure to not breathe directly into a client’s face after devouring this, or kissing your honey (unless they deserve cruel and unusual treatment for doing you dirty).
2. Sloppy Bao – OK, I found this on MarthaStewart.com and I really hope she doesn’t go after me like she did to Gwyneth Paltrow. This fresh Vietnamese-style sloppy joe combines ground beef with shallot, lemongrass, and red curry paste in a ketchup and Dijon mustard. Thanks Martha!

3. Brie and Turkey Sandwich – Treat yoself to fancy brie cheese, turkey and apple sandwich for a delightful afternoon pick-me-up.
4. Prosciutto, Lettuce and Tomato – I adoreeeeee Italian meats, but limit myself so I don’t turn into a thick stick of Salami. Swap bacon for tender Prosciutto to make a PLT and feel free to add an avocado for PALT. Avocado makes everything better, plus an added healthy fat!!
5. Salmon Salad and Arugula Sandwich – Switch it up by buying salmon in a can instead of tuna, and prepare salmon salad the same way you would tuna salad and top it with peppery arugula. Yum!
